My Salad Days

We just harvested the lettuce from our little cold frame garden at Primaria Quilcacancha.  We’re going to have a big harvest party with the parents later in September, but the lettuces weren’t going to wait that long.  I wanted to share our first pickings. 




We made two salads to mixed results.  One was with Peruvian flavors and was just lettuce with tomato, avocado, salt, and lime and most of the kids ate that up.  The other was with Asian flavors and I thought the kids would go for the clementine slices, crushed peanuts, and soy sauce based dressing, but I made the mistake of adding garlic and ginger and it was a bit much for them.  Anyway, they were helpful, it was fun, and the kids ate some greens.  It was a success considering some had never seen a salad before.
